Exercise...who snows?

 Once again we have that 'is it going to snow' feeling in the air with possible disruption ahead!

It seems almost every year, when everyone wants to get back into a routine and start their exercise after Christmas.. we get hit by a bout of bad weather and everything goes t**s up!

It's so annoying when you have your day planned in your head but by lunch time you're not sure if that workout kit, pair of trainers and bottle of water will see the light of day after all. Or, school is closed and your morning class is impossible to get to because your children are home. 

So, your class is canceled and you have to go home - use the time wisely, stop at the supermarket and pick up some health food (fresh veg and meat or fish) and make a super healthy meal instead of consoling yourself with a bottle of wine and a box of chocolates.

If you have fresh food in the fridge, use it up... make a stir fry or casserole. Prepare a health lunch for the next day at work (or for your sledging trip if you can't get to work).

When you get home, before you get inside, take your coat off and warm up... go out for a brisk walk (as long as it's safe and not too slippery!) It will clear your mind from the day and you won't feel like you've missed out on exercise quite so much.

Whatever you decide to do, keep safe and keep warm.


BeefMince&Veggies LASAGE from Rasha

A Gorgeous clean and very filling Faux Beef Lasagne

Ingredients:
Filling: mince meat, 1 medium onion, chopped fresh tomatoes, mushrooms, 1 yellow pepper and 1 red pepper plus tomato paste.

For layering:
1 medium butternut squash
1 large courgette

Preparation:
Heat coconut oil in a pan, then add onion and stir until softened. Add mince meat and stir until browned. Then add mushrooms, tomatoes and peppers and mix together. Cook for a few minutes before adding tomato paste and warm water to cook the meat & veg. Season to taste and allow the liquid to reduce.

Meanwhile slice the butternut squash and courgette and grease an oven proof dish. Layer the base with the veg slices and start adding the mince mixture and creating more layers. Finish off with a final meat layer on top.

Bake in a moderately hot oven for 45min or longer depending on your oven type.

Enjoy with a salad or more veg on the side x
